What to Cook for Dinner this Week

My goodness. This is my last weekly dinner menu for March! Where did the month go? Okay, so it went to illness and travel, didn’t it? Almost without me noticing, apparently. I had such intentions, too, of posting  recipes from a new Cookbook of the Month, which I didn’t get to. In fact, I never even managed to announce a Cookbook of the Month for March, even though I picked one and made some recipes from it. I guess we’re looking at April instead. Sigh. What’s a girl to do when things go haywire, but get up, brush herself off, and move on?

Here’s the menu for the upcoming week.

Monday: White Bean and Chicken Chili. Chili season is almost over, so get it while you can!

Tuesday: Panko-Crusted Tilapia with Lime and Tomato Salsa. I’m trying to get fish on the menu more often around here. Serve over couscous, quinoa, or another grain of your choice, with a green vegetable or a salad on the side for a balanced plate.

Wednesday: Easiest Enchiladas. Love. Just love.

Thursday: Sesame Chicken Noodle Bowls. These are good with bean threads as well as the thicker rice noodles.

Friday: Takeout Night. Family Night, we call it. Takeout food, then a trip to the used bookstore, where L tears apart the children’s section. Literally. It’s good fun, and doesn’t involve dirty dishes.

Saturday: Goulash. My mama’s recipe.

Sunday: Chicago-Style Italian Beef. Throw it in the Crock-pot when you get home from church, and you can have the afternoon off.

Weekend Breakfast: Chocolate Banana Muffins. They seem more like dessert than breakfast, but they really are good for you (shh, don’t tell!).
