What to Cook for Dinner this Week

Ahh, friends. If you’re anything like me, your mind has been on Easter and not on next week or even what you’ll do for dinner on Monday, even though it’s less than 48 hours away (did I just scare you by pointing that out?). I spent today racing around to grocery and craft stores for tomorrow’s brunch fixings and bits of spring decor that were on clearance, and last-minute stuff for L’s Easter basket. And in the midst of that, and the fact that E sent me off to the coffee shop to spend all day yesterday working on my novel, I realized that my weekly dinner menu post had completely slipped my mind! But here it is, and hopefully not too late. Wishing you tons of blessings tomorrow as we celebrate Jesus’ resurrection. We’re trying out yet another new church, and this time I’m super psyched. What better day to get a good read on the role of Jesus in a church’s theology than on Easter Sunday?

The weekly dinner menu: six dinners in under 60 minutes each. Aaand here we go . . .

Monday: Latkes. Blame it on Meatless Monday if you like, but I really just want to make these. And eat them with a big ol’ dollop of sour cream. Because that’s how I roll. The other people in this house like applesauce.

Tuesday: Omelettes. E is not an omelette person, but I am, and he will be at his internship, so I can make what I want. I’ll make him an egg and cheese English muffin when he gets home, and he won’t say a word.

Wednesday: Spaghetti and Meatballs. Whole wheat spaghetti. Turkey meatballs. Tomato Sauce. Salad on the side. Happy family at the table.

Thursday: Chicken Chilaquiles. Sort of related to nachos, sort of not really. But always easy and yummy.

Friday: Not only is it Takeout Night, it’s E’s birthday, so dinner will be his pick.

Saturday: Shepherd’s Pie. We really love this recipe. And since it’s about to be summer, this may be the last chance we’ll have to eat it until fall.

Sunday: Jenny’s Buttermilk Oven-fried Chicken. People, this is no ordinary chicken. It will knock your flipping socks off. Serve it with some Texas Bean Salsa. That’s what we do.

Weekend Breakfast: I always try to make a cooked breakfast on the weekend – something yummy and a bit special that breaks up the everyday rinse and repeat of cereal, oatmeal, and NutriGrain bars that goes on around here. This weekend, I’m going to try these Cream Scones. Because I love me some cream scones (once you have had cream scones in a tea shop in England – which I did – you are never the same). But they will not be tiny. And they might have blueberries instead of strawberries.
