What to Cook for Dinner this Week

It’s almost the New Year, friends, and I’m guessing you’re as ready as I am to welcome a fresh start. We’ll be making our way back to Virginia this week, and then settling in for a small get-together on New Year’s Eve with our local family. I have a few ideas to help you ring in the New Year with little effort, and a yummy New Year’s Day breakfast menu, as well as a round of yummy dinners that will get you through the week in one piece.

Note: everything here can be made gluten free!

Monday: Jenny’s Turkey Chili. Serve with tortilla chips or, if you’re feeling decadent, Fritos.

Tuesday (New Year’s Eve): Fondue Night! Nothing is simpler or more delicious than a fondue spread. And you don’t need to go out and buy a fondue set to do it. You can make the fondue in a double boiler and keep it warm over the simmering water right on the stove. One of the small Crock-pots also works well (just be sure to stir often). I’m doing a Brie and Caramelized Onion Fondue with French bread, crackers, summer sausage, apples, strawberries, and pears for dipping, as well as a Chocolate Fondue with fruit, angel food cake, pretzels, and Rice Krispie Treats.

Wednesday (New Year’s Day): Start the new year off right with Eggs Benedict or, if you’re not an egg person, Stuffed French Toast. I’m going to have a hard time choosing one over the other! For dinner on New Year’s Day, keep it simple with a pot of Chicken Tortilla Soup and all the fixin’s. Yum!

Thursday: Pasta with Chicken and Pesto Cream Sauce. A Caesar or green salad on the side makes for a balanced meal.

Friday: Takeout Night.

Saturday: Moroccan Meatballs. I’ll serve these with some brown rice as well as the sautéed cabbage.

Sunday: Fajitas. A fave, and we haven’t had them in a while.
