What to Cook for Dinner this Week
I’ve got a great menu for you this week, using some of the new recipes I’ve gleaned from the Cookbook of the Month, as well as a few favorites.
Monday: Simple Sesame Chicken Noodle Bowls. This is perfect for a really busy night, and Mondays are one of our busiest nights this season, since E has class. I’ll buy a rotisserie chicken and use part of the meat in these, and save the rest for Tuesday’s dinner.
Tuesday: Quesadillas with Chicken and Fajita Veggies. L loves these, and with the rotisserie chicken all ready to go, they’re especially quick.
Wednesday: Greek Chicken Lemon Rice Soup. I’ll use the last of my rotisserie chicken, or a package of chicken thighs if I run out, to make this tasty soup. A Greek salad on the side adds punch to the meal.
Thursday: Salad Pizza. A twist on our usual pizza night. I love mine with ranch dressing. E likes Thousand Island.
Friday: Takeout Night. This week, I think we’re hitting Five Guys. Not exactly healthy, but also not McDonald’s. If I’m going to have a takeout burger, this is the one. I haven’t had a burger in almost two months, so I’m planning to savor every bite.
Saturday: Girls’ Night In Pasta. I’ve been totally craving this, so even though it’s a “girls'” dish, E will just have to suck it up. Salad on the side, please. Yum!
Sunday: Shepherd’s Pie. This is a perfect meal with which to gather everyone around the table for Sunday dinner. Add a fresh green salad and maybe some homemade yeast rolls if you want to be decadent.
Weekend Breakfast: It’s time for some Raised Waffles. Temps here have been in the single digits this week, so we’re due for a cozy weekend breakfast.
