What to Cook for Dinner this Week
We’re not buried in snowdrifts here like much of the nation, but temperatures have still been colder than usual on most days, and I feel like I’m continually trying to keep us warm and cozy by cooking up things that satisfy in this weather. Hopefully, spring is closer than it seems, and it won’t be all that long before we’re seeing asparagus and new potatoes at the farmers’ markets. Until then, though, I’m making do with comforting soups and Crock-pot meals, as well as plenty of our favorites. I hope there’s something in this week’s menu that will inspire you. I’ve been cooking a bit out of my February Cookbook of the Month, and I’ll have some new recipes for you over the next week. Some of them are just delicious, and I’m excited to share them with you!
And with that, here’s your weekly dinner menu…
Monday: Spicy Fish Tacos. These have quickly become a family favorite!
Tuesday: Breakfast for Dinner. Some of my favorite dinners growing up were nights when my mom made pancakes or French toast for dinner. Pick your favorite breakfast and make it dinner instead! I’m thinking Yeasted Waffles (mix up the batter in the morning) or our favorite Sour Cream Pancakes.
Wednesday: Tuscan White Bean Soup and No-knead Bread.
Thursday: BBQ Chicken and Pineapple Quesadillas.
Friday: Takeout Night. What’s your family’s favorite takeout place?
Saturday: Easiest Seafood Stew. Serve with a salad and the rest of the bread from Wednesday, or over linguine.
Sunday: Sunday Night Pasta. Because, well, it’s Sunday. Serve with a green salad.
Weekend Breakfast: Since I’m making breakfast for dinner one night, I’m planning to make a batch of E’s favorite Blueberry Coffee Cake Muffins for Saturday morning. Yum!
