What to Cook for Dinner this Week
It’s been a crazy day. When I got up this morning, our Internet connection was down, and it took several attempts to reboot the modem and get everything up and running again. I went right into a busy workday, which is why you’re seeing the menu show up at lunchtime today. Thanks for grace!
I hope you enjoy this week’s menu. I’ve continued to incorporate some of the new recipes I’ve been posting; let me know how you like them by leaving a comment below or on Facebook. I want these menus to work for you – so I need your feedback!
Monday: Italian-style Stuffed Peppers. Serve these with a salad – regular or Caesar – and some spaghetti or brown rice if you need a grain as well.
Tuesday: Easiest Enchiladas. We’ve really been craving these, so it’s time for them to make a comeback. As a general rule, we never get tired of Mex around here!
Wednesday: Chicken Saag with Vegetables. Serve over Basmati rice. I like Trader Joe’s brown Basmati. I make it in an Aroma digital rice cooker – best 30-ish dollar appliance I own. Perfect rice every time!
Thursday: Spaghetti with Meat Sauce. Because sometimes, it’s just nice to have a spaghetti night.
Friday: Takeout Night.
Saturday: Chicken Soup with Thyme, White Wine and Orzo. This is always, always a good choice on a winter Saturday. Serve with a green salad and some of Jim Lahey’s No-knead Bread. Easy, comforting, perfect.
Sunday: It’s SuperBowl Sunday, so I’m making Sloppy Joes. I’ll indulge a little with rippled potato chips and French onion dip as a side. He’s going to be soooo happy. Later, we’ll have some Mexican Layer Dip for gametime.
