What to Cook for Dinner this Week

It’s been a banner week here. Everyone is finally over The Cold that Would Not Leave, and L and I finally made it to a group Bible study through the church we’ve been attending since January. We met four families with lots of kiddos, and even though L cried and was afraid to leave my side, it was still good to get out of the house and experience a bit of community. Now, I’m savoring the fact that it’s Friday, I have the afternoon off to write, it’s takeout and bookstore night tonight, and we have a fun playdate scheduled for tomorrow with my friend Jen.

I’ve finished making all the recipes I had planned from Aida Mollenkamp’s Keys to the Kitchen, but I still have a few to post for you, so we’ll take those into next week. I’ll be introducing the March Cookbook of the Month as well, which is full of delicious-sounding recipes I’m looking forward to playing with.

Here’s your weekly dinner menu, which highlights a few of the recipes I posted this past week, of course. Hope you can find something here that makes your week a little easier!

Happy Friday!

Monday: Fajitas. One of our favorite dinners, always.

Tuesday: Rustic Spanish Tortilla with Smoked Sausage. Serve with a green salad.

Wednesday: Crock-pot Moroccan Chicken. One of E’s favorites, and a Crock-pot dinner is always good on a Wednesday. Serve over rice. Sometimes I make a salad to go with it, sometimes not.

Thursday: Thai Beef with Basil.

Friday: Takeout Night. Our Friday tradition.

Saturday: Smoky Sweet Potato Hash with Eggs. To me, this is a comfort dinner, perfect at the end of a busy Saturday.

Sunday: Spaghetti. This week, I’m going to take the extra time to bake it. Just mix together the cooked spaghetti and sauce, pour it into a casserole, top with shredded mozzarella and parmesan, and bake for 15-20 minutes at 350, until the cheese is melted and bubbly. Serve with a salad.

 Weekend Breakfast: I’m going to make some of our favorite Banana Muffins this week, with chocolate chips the way E likes them.

Weekly Treat: Don’t pass up this Quick & Easy Homemade Chocolate Pudding. If you want to be extra decadent, top it with whipped cream. Your family will be all smiles.
