What to Cook for Dinner this Week
I haven’t had much to say this week. We’re getting ready for visits from family and E’s graduation and a work trip I’m taking to Nashville next week and things are . . . well, they just are. I’m treading water. Trying to be enjoy the moments even though, as usual, they are fifty things all crammed together into two short weeks. On top of that, I’m grappling with the fact that L is about to turn two. Two. I’m not quite there yet. Seems like we just celebrated her first birthday.
Anyway, here’s the weekly menu, because after all, dinner must go on. We all have to eat, right?
Monday: Simple Sesame Chicken Noodle Bowls. This is perfect for a really busy night, and Mondays are one of our busiest nights. This week, it’s graduation rehearsal night.
Tuesday: Quesadillas with Chicken and Fajita Veggies. L loves these, and they’re quick if you make the chicken ahead of time. A rotisserie chicken is great for these.
Wednesday: Thai Beef with Basil.
Thursday: Salad Pizza. A twist on our usual pizza night. I love mine with ranch dressing. E likes Thousand Island.
Friday: Takeout Night. This week, Takeout Night falls on E’s graduation, so we’ll go someplace nice for dinner with the whole family.
Saturday: Crock-pot Moroccan Chicken. This is perfect for when you’ve got a busy day planned with out-of-town guests.
Sunday: Shepherd’s Pie. This is a perfect meal with which to gather everyone around the table for Sunday dinner. Add a fresh green salad and maybe some homemade yeast rolls if you want to be decadent.
Weekend Breakfast: Company’s Coming Banana Granola Muffins. The name says it all!
