What to Cook for Dinner this Week
I am reeling – literally – from some kind of virus this weekend. It feels fluish (fever, chills, lots of aches) but has all the finer points of a bad cold as well – a raging sore throat, sinus headache, and congestion. Nice, huh? This ruined my grand plans to make peach jam and homemade ice cream. And because there just aren’t enough weekends in the summer, it feels to me like this is time I can’t make up. But we still have to eat, which means I still have to plan meals for the week and somehow manage to get to the grocery store. So here’s my menu for the week.
Monday: Grilled chicken, roasted sweet corn, and PW’s Spicy Pasta Salad with Smoked Gouda, Tomatoes, and Fresh Basil. This is my favorite pasta salad ever, folks.
Tuesday: Crab Cakes. We don’t have these very often, but summer is the perfect time. Serve with a green salad, some Sweet Potato Oven Fries, and fresh fruit.
Wednesday: Salad Pizza. I love this – especially with pesto on the pizza.
Thursday: Shredded Chicken Tacos. Use this awesome Crock-pot chicken recipe. You won’t be sorry!
Friday: Takeout Night.
Saturday: Shakshuka. This North African dish is now on my comfort foods list. Serve it with some crusty bread, perfect for sopping up the sauce.
Sunday: Minestrone with Bacon, Tortellini, and Vegetables. I love this soup so much that I had to put it on the menu again while the zucchini and summer squash are at their peak. Serve with the rest of your bread from Saturday night’s dinner.
Weekend Breakfast: Fresh Muesli. Mix it up on Friday night. Serve with fresh melon slices and a drizzle of honey.
