What to Cook for Dinner this Week
We’ve had another week of people coming and going and coming and going here – our Virginia family is packed out and on their way to Michigan for a week, and they spent their last night here with us. Because their belongings are en route to Germany, I inherited a pantry’s worth of goods that I need to find room for. It’s a blessing, but pales beside the fact that we’ll miss them like crazy this next three years.
I feel like this week is finally the week we’ll start settling into a real sense of routine, with E two weeks into his internship and L on her fourth week of preschool. There’s no company coming and nothing major going on. We can just focus on the day to day.
Here’s the my menu for the week:
Monday: Orechette with Pancetta, Peas and Three Cheeses. Serve with a green salad. Yum!
Tuesday: Spicy Fish Tacos. With a batch of fresh guacamole and chips on the side. Spice to taste.
Wednesday: Gyros.
Thursday: BBQ Chicken, Roasted Corn and Pineapple Quesadillas. This is one of our absolute favorite weeknight dinners. If you want to cut back on the spice, use plain monterey jack cheese instead of pepper jack.
Friday: Takeout Night. It’s become a family tradition. I love it because it gets me out of the kitchen one night a week.
Saturday: Grilled Burgers, Spicy Sweet Potato Oven Fries, and Katy’s Texas Bean Salsa.
Sunday: Pork Shoulder Ragu. I think we’ll eat it on buns this week (there will be leftovers from burger night), with a green salad on the side.
Weekend Breakfast: Stuffed French Toast made from brioche or challah, with macerated strawberries instead of syrup, and whipped cream.
