What to Cook for Dinner this Week

Summer is in full heat mode here, with temps last week approaching 100. I’m continuing to settle into a routine of school drop-offs and pick-ups, early morning gym visits, and E working. I’m also trying to figure out where to go from here. By that I mean, what does the future of this blog look like? What I’ve found is that I enjoy the mix of posts on parenting and family life, my faith journey, and cooking. It’s eclectic, I know, and I may need to reexamine it in light of my goal to start publishing fiction. But until then, I’m going to keep on keeping on. I love sharing my weekly menu with you all, knowing that when you’re in a pinch or a rut, I can give you ideas for easy, family-friendly meals that don’t blow up your kitchen. And with that, here’s this week’s menu.

Monday: Korean Bibimbap. An easy, yummy dinner we love around here.

Tuesday: Oven-Barbecued Chicken with My Favorite Potato Salad and Texas Bean Salsa. By all means, add some tortilla chips, but I like to eat my Texas Bean Salsa with a spoon.

Wednesday: Sloppy Joes. With a fresh veggie slaw (cabbage, carrots, broccoli) and watermelon.

Thursday: Pizza Margherita. I may cheat and add some caramelized onions. Yum!

Friday: Takeout Night. So I can kick back and relax with no mess.

Saturday: Taco Salad. Romaine, black beans, seasoned ground turkey, diced red onion and green pepper, sliced black olives, sweet corn, shredded cheese. Top with salsa, sour cream, and sliced avocado or guacamole.

Sunday: Jen’s Italian Beef. This always brings back happy memories of my Chicago years. Serve with some classic potato chips and pickle spears.

Weekend Breakfast: I can’t stay away from these Leftover Oatmeal Muffins, especially since it’s blueberry season.
