What to Cook for Dinner this Week
I know, I know. It’s Sunday night, and here I come with the weekly menu. All I can say is that this week’s run of six dinners in under 60 minutes is a great one, and I hope you haven’t done your grocery shopping yet. And even if you have – well, tuck this menu away for later.
I’m doing something kind of crazy right now – fasting twice a week as part of the 5:2. I’ll tell you more about it tomorrow. Fasting while your family is eating is not easy, because if you’re like me, you still have to make dinner or everyone starves. I’m wrestling my way through that right now, and looking for dinner ideas that won’t negate any positive results from the fast, but that E and L will still love. Health food, in my house, can’t quite look like health food.
I’m planning to cook a lot from The Daniel Plan Cookbook, so I suppose it’s my cookbook of the month for May. It’s the first cookbook I’ve ever helped edit, and it’s a total winner – tons of favorites made healthy without losing any of the things you love about them. I have yet to be disappointed.
So here’s the week’s dinner lineup. Six meals that are good for you, and won’t keep you in the kitchen (or lighten your wallet more than any other week). Happy cooking!
Monday: PW’s Pasta Puttanesca. I add seasoned chicken breast, omit the anchovies, and use whole grain pasta. A green or Caesar salad makes a great side.
Tuesday: Sloppy Joes, made with ground turkey and served on whole grain buns with Tangy Apple Slaw and some baked sweet potato chips. Yum!
Wednesday: Shredded Spicy Chicken and Black Bean Tacos, made with my friend Sarah’s genius Crock-pot spicy shredded chicken. Oh, the leftovers!
Thursday: Tomato, Pesto and Provolone Paninis with Creamy Tomato Soup.
Friday: Takeout Night. It’s tradition around here. If you don’t take a night off from the kitchen, you should. Go out. Order pizza or Chinese. Take a load off, literally.
Saturday: Seasoned Turkey Burgers with Pepper Jack using this turkey recipe. Baked, not fried. Serve with Spicy Sweet Potato Oven Fries, Katy’s Texas Bean Salsa (serve as a salad) and lots of pickles.
Sunday: Korean Bibimbap. This is a lovely and easy dinner with which to end the weekend. Very low maintenance, and highly customizable. Make it with ground turkey to keep things healthier.
Weekend Breakfast: Easy Stuffed French Toast. Try stuffing it with Nutella or almond butter. If you’re not watching your waistline, Trader Joe’s Speculoos Cookie Butter is an awesome choice.
