What to Cook for Dinner this Week

We’re headed to Michigan this morning, right into the snowstorm that’s sweeping the country. We’ll be camped out at E’s parents’ for the week, and I’ll work in my corporate office Monday through Friday. And then – Christmas really begins. I’m sure things are just as nutty for all of you, so I wanted to keep the weekly dinner menu going throughout the holidays – for me, having a menu is even more key this time of year to feeling like I’m not in a tailspin.

I’ve been craving Asian food, which is reflected here in a few different ways: the Indian flavors of curry, Thai Beef with Basil, and a recipe for Asian Chicken Skewers and Cold Noodles that has a bit of Chinese inspiration behind it. An omelette and salad night brings a little French flair to the week, and Smoky Chipotle Nachos add some kick. Top it off with a hearty pot of E’s favorite Steakhouse Soup next weekend, when you’re worn out from the last of your pre-Christmas errands and need to curl up with a bowl of something hearty and comforting.

Monday: Chicken Curry with Apples. I look forward to weeks when this easy curry is on my menu. It’s yummy and so satisfying. Serve with rice – brown or white.

Tuesday: Thai Beef with Basil. With rice or noodles.

Wednesday: Goat Cheese and Red Pepper Omelettes. Do it the way the French do, with a light and satisfying omelette. A fresh green salad and a glass of semi-dry white wine are the perfect accompaniments.

Thursday: Asian Chicken Skewers and Cold Noodles. I haven’t made this is a long time, and it just sounded good. Don’t let the cold noodles throw you off – they may be cold, but they’re delicious.

Friday: Takeout Night.

Saturday: Smoky Chipotle Deep Dish Nachos. A perfect quick dinner after a day of shopping or baking.

Sunday: Steakhouse Soup and No-knead Bread.

Weekend Breakfast: The Best Buttermilk Pancakes and oven-fried bacon. Because you can’t go wrong with pancakes and bacon.
